Chicken Parmesan

This was a recipe my mom would fix during the week.  She would serve this with garlic butter pasta, and the left overs we would make sandwiches with the next day.

Chicken Parmesan


4-Boneless Skinless Chicken Breasts
2 Cups Italian Seasoned Bread Crumbs
2-Eggs
Mozzarella Cheese- Either 1 Cup of Shredded or 4-6 Slices
1-Jar (16oz) of Marinara Sauce or Spaghetti Sauce
1 Tsp Garlic Powder

  1. Preheat oven to 375
  2. Use a 13x9 baking dish (I usually coat the bottom with olive oil, very lightly)
  3. In a bowl, beat the 2 eggs and add the garlic powder to the eggs
  4. In another bowl, have your Italian Seasoned bread crumbs ready to use
  5. Dip 1 chicken breast into the egg, then dip into the bread crumbs.  Make sure to coat chicken very well
  6. Arrange the chicken in the baking dish
  7. Bake uncovered for 20 minutes
  8. Now you can put the sauce over the chicken, and then add the cheese
  9. Bake an additional 10 minutes, or until chicken is no longer pink

For the sauce and cheese, use as much or little to your taste.  I love cheese, so I use sliced mozzarella cheese.  You can actually get that from the deli, or you can buy the solid block of mozzarella and cut it yourself.

Garlic Butter Pasta

If you want to make the Garlic Butter Pasta, here's the recipe for that.  I would start making the past right after you put the chicken in the oven so everything should be ready about the same time.  Also great to serve with some garlic bread... yes I love garlic!!!

1-2 Tsp Garlic Powder (to your taste)
1 lb Pasta (your choice, I use angel hair)
3 tbsp Butter, soften
2 tbsp Olive Oil
Salt
Pepper, Ground
Basil or Oregano

Cook pasta accordingly, drain.  Add butter, garlic powder, olive oil.  Salt, pepper and basil or oregano to you taste.
