Chicken Parmesan

This was a recipe my mom would fix during the week. She would serve this with garlic butter pasta, and the left overs we would make sandwiches with the next day.

Just a little FYI about me....

I grew up in a Polish-Italian home. My mom and dad met after WWII in England. They got married after one week, yes ONE week. They had 6 children while in England, and then after 19 years in England they came to America. I arrived shortly after, somewhat like a "Welcome to America surprise".

Over the years, my mom learned how to cook Polish foods, and my dad learned to enjoy the Italian cooking my mom perfected. Growing up, I enjoyed helping my mom cook these wonderful dishes. Seeing her make dough from scratch, not measuring anything, just going by sight and taste, made me appreciate the meals so much more.

We always had holidays at my parent's house. The dishes were always a mixture of Italian & Polish foods, and these dishes became a tradition. We all looked forward to mom's fried fish, a memory from there years in England. Beet soup with sauerkraut perogies, homemade of course.

I met my husband while in high school, and after almost 24 years, he still loves my cooking. Now the twist with my husband, he grew up on southern cooking. This was a new adventure for me. We took many trips down to North Carolina to visit family, and WOW, the food was something that I never had before.

I would come back and try to duplicate the meals that we had down there, mostly my husband's favorites. It took a while, but I was able to do it. The one thing I have to say was the hardest, was finding the ingredients back home. I started going to the stores when we visited NC, and made sure I stocked up on the items I could not find at home.

Even while working, running around with the kids, I find time to make some of recipes that my mother taught me, which are also my husband's favorites. I started sharing my recipes with friends and colleagues, and then I thought why not share it with everyone!!!
